Savory Bbq Chicken, Bacon & Cheese Rolls

Tonight I concocted a new recipe and it received 5 gold stars from each of my family members & a request that I make it again next week. I'd say that makes it a hit with my fam! ;) It's such a simple recipe, takes less than 10 minutes to make and can easily be adapted to just about any preference or adjusted around allergies. Busy mommas, this recipe is bound to hit it out of the park with any bread lover in your family & help you get a delicious dinner on the table in under 30 minutes!  

Since I happened to have a lot of shredded chicken leftover from a meal the other night that's what I used, however pulled pork or shredded beef could easily be substituted in these scrumptious savory rolls. Tonight I made them with a bbq sauce, but I plan to make half with ranch and half with a homemade sauce next time, to change them up a bit. What I liked most about these simple rolls is that I can make them with any meat I happen to have on hand & the topping and sauce options are endless. Which means tons of variety & plenty of opportunities to give my family a "twist" on a family favorite from time to time. Score!🙌

INGREDIENTS NEEDED TO MAKE SHREDDED Chicken or PORK  ROLLS

  • Refrigerated flaky, sweet hawaiian rolls or crescent dough (*I used 2 cans of Pillsbury sweet hawaiian rolls so there were 4 for each of us. 2 for dinner and 2 for lunch the next day.)
  • Shredded chicken or pulled/shredded pork
  • Cheddar or Colby jack cheese, shredded
  • Cooked Turkey Bacon Slices, chopped into 2-3 inch pieces
  • BBQ Sauce (other options; Ranch, Italian dressing, honey mustard, parmesan cheese etc.)

HOW TO MAKE BBQ Shredded Chicken & Bacon or PULLED PORK Rolls/CRESCENTS

  1. Preheat oven to 350ºF and grease a baking sheet (or place directly onto non stick pans).
  2. Carefully split each roll in half, leaving just the ends connected. If using crescent dough: unroll crescent dough and separate into individual triangles.
  3. Spread a thin layer of BBQ sauce on each half or each triangle of the crescent rolls.
  4. Add warm shredded chicken & a 2-3 inch slice of bacon or pulled pork to each roll (crescent).
  5. Drizzle a dollop of BBQ sauce on top of meat.
  6. Add a sprinkle of shredded cheese to each roll/crescent.
  7. Fold rolls in half, placing the top half on the bottom and gently press edges together to help hold everything in. If making crescents: Roll up the crescent around the meat/cheese combo.
  8. Bake about 10-12 minutes, until golden brown. Check on rolls about half way through and rotate baking sheet/pan. 
  9. Remove from oven, allow to cool for 2 minutes and serve while warm. 
  10. Serve with a side salad, side of steamed veggies or fruit salad. 
  11. Enjoy!! :)

Easy, Cafe Yumm style Rice Bowls

  Today I'm going to share one of my family's favorite weeknight meals with you, our version of a cafe' yumm bowl. It is a very simple recipe that can be altered to cater to even the most picky eaters and easily adjust for everyone's various health needs. Of course ours includes rice, we prefer to use long grain brown rice or jasmine rice but it can be made with any type of rice or quinoa. I'm sure it could be made with tofu as well or another substitute for rice that you prefer.  I always like to make a big batch of rice in my favorite small kitchen appliance, my instant pot. *Friends if you don't have one of these babies yet you are missing out!! IMHO ;) For our family of 4 I like to make 4 or 5 cups of rice (that usually leaves me with plenty of leftovers that can be used in another meal later in the week and for lunch the next day). After my rice is cooked I empty it from my I.P. and mix in my previously cooked/shredded chicken (I like to make mine in my I.P...
