Homeschool Insights & tips

Hi friends,

My hope in creating this page is to provide both veteran & newbie homeschool families encouragement, resources, help and support. On this page it is my goal to share tips and insights I've gleaned from my experiences homeschooling over the past 6 1/2 years & real life struggles & successes in our homeschool journey. It is a bit of a learning curve if you are just jumping into homeschooling and I hope to give you a safe landing place & to help you ease into this phase of your school years.

Happy schooling friends! I am excited to share ideas, adventures, thoughts, curriculum or products we love, ideas & tools that will help make your homeschool journey a successful one :)

So glad to have you here, I look forward to "meeting" you here and having you along for the journey!

Easy, Cafe Yumm style Rice Bowls

Today I'm going to share one of my family's favorite weeknight meals with you, our version of a cafe' yumm bowl. It is a very simple recipe that can be altered to cater to even the most picky eaters and easily adjust for everyone's various health needs. Of course ours includes rice, we prefer to use long grain brown rice or jasmine rice but it can be made with any type of rice or quinoa. I'm sure it could be made with tofu as well or another substitute for rice that you prefer.  I always like to make a big batch of rice in my favorite small kitchen appliance, my instant pot. *Friends if you don't have one of these babies yet you are missing out!! IMHO ;) For our family of 4 I like to make 4 or 5 cups of rice (that usually leaves me with plenty of leftovers that can be used in another meal later in the week and for lunch the next day). After my rice is cooked I empty it from my I.P. and mix in my previously cooked/shredded chicken (I like to make mine in my I.P...

Creamy Pumpkin Pie

Hey there friends! All my pumpkin pie fans out there will love the rich creamy texture of this pie & the faint coconut flavor is a surprise twist for those who aren't regularly pumpkin pie fans. It's a slightly sweeter & creamier version that may just win over any pumpkin pie skeptics, lol ;)  This yummy pie was a huge hit today after our Thanksgiving meal & has already been requested for the next holiday ;)   Ingredients:  1/2 cup cold milk 1 package (6 serving size) vanillla instant pudding & pie filling 1 teaspoon pumpkin pie spice (or 1/2 teaspoon ground cinnamon, 1/4 teaspoon ground ginger & 1/8 teaspoon ground cloves in place of pumpkin pie spice) 1 cup canned organic pumpkin 2 1/2 cups frozen non-dairy whipped topping, thawed (* I use coco-whip to add the slight coconut flavor 😊)  1 Keebler Ready Crust Graham Pie Crust Directions: In a large bowl beat milk, pudding mix and spice with wire whisk for 1 minute. (Mixture will be very thic...
