About Me:

 Hi friends,

I'm K. Wife to my amazing hubby & a home-school veteran who has been homeschooling my 2 kiddos for the past 6 1/2 years. I love the incredible memories that I am able to create with my kiddos each year and all the special moments we share every day while we learn and grow together. The past 6 years has taught me to slow down and savor each moment, to really relish each and every opportunity and take the time to appreciate the season I'm in and not try to hurry through it even if it may be difficult. Life has taught me that in those difficult seasons that is where I learn and grow the most because there are so many lessons to learn and glean from so its best to embrace it with a smile.

One of our favorite things as a family is to include travel or exploring nature into our school year as much as possible because we all love to travel, hike, getting out into nature & exploring new places. Some of our best learning moments have happened while we were out exploring. It allows for all of our senses to be alert and for us to become more in tune with nature. We love discovering new places, hidden gems and places off the beaten path. It is so thrilling for us to discover a new favorite place and to make special memories there as a family.

I also love to decorate, craft and do diy projects so you may see some of those floating around on here from time to time (perhaps it will be one of our school projects 😉).  You may also see info about organizing, planning and putting together events as I have become the decorator/planner for multiple events over the past few years and it is something that I love to do 😍😊

Thanks for joining me here, I'm so glad that you're along for the journey! I look forward to getting to know each other better and I'd love to read your comments so please message away with your thoughts, comments and questions!

~K

Shredded Chicken & Cheese English Muffin Breakfast Bake

HI Friends, Happy Holidays!! This year for our Christmas morning brunch I tried out this new recipe and it was a huge hit with the fam so I just had to share it with you :) I'm loving that this recipe can be made ahead of time (which is great for a holiday meal) and stored overnight in the fridge to save prep time the day you intend to bake it. This year I coupled this with my yummy Cinnamon Roll French Toast Breakfast Bake (recipe link here:  Cinnamon Roll French Toast Breakfast Bake )  for a hearty breakfast. We ate around 11:30am and still haven't been hungry for much other than a snack of fruit & veggies and it's 6:30pm! It held us all day and we are just getting ready to eat a lite dinner while we watch some Christmas movies :)  Hope your family enjoys it as much as mine did! :)  INGREDIENTS: 8 English muffins sliced into 1 inch cubes 16 oz shredded chicken or diced cooked ham  2 cups shredded cheddar cheese 8 large eggs 2 cups heavy whipping cre...

Avalanche Cookies

During the holidays one of our traditions is to have a baking day while we listen to Christmas music or watch a Christmas movie. It always helps to get us in the Christmas spirit while we make fun memories and yummy treats to share with our family & friends. One of our favorite & simple no bake holiday cookie recipes are Avalanche Cookies. These have become a quick treat we can whip up and bring to a holiday party or for a special treat while we have a Christmas movie marathon. Hope your family loves them as much as mine! :) INGREDIENTS:  One lb. white chocolate baking bars 1/2 cup Peanut Butter (creamy) 2 1/2- 3 cups Rice Krispies 2 cups mini marshmallows  DIRECTIONS: Melt chocolate baking bars over low heat on the stove, stir continuously so chocolate won't burn. When melted add in peanut butter and stir until creamy. In a large mixing bowl mix rice Krispies and marshmallows. Pour chocolate mixture over rice Krispies and marshmallows and stir to combine. ...
