Avalanche Cookies

During the holidays one of our traditions is to have a baking day while we listen to Christmas music or watch a Christmas movie. It always helps to get us in the Christmas spirit while we make fun memories and yummy treats to share with our family & friends. One of our favorite & simple no bake holiday cookie recipes are Avalanche Cookies. These have become a quick treat we can whip up and bring to a holiday party or for a special treat while we have a Christmas movie marathon. Hope your family loves them as much as mine! :)

INGREDIENTS:

One lb. white chocolate baking bars

1/2 cup Peanut Butter (creamy)

2 1/2- 3 cups Rice Krispies

2 cups mini marshmallows

DIRECTIONS:

Melt chocolate baking bars over low heat on the stove, stir continuously so chocolate won't burn. When melted add in peanut butter and stir until creamy.

In a large mixing bowl mix rice Krispies and marshmallows. Pour chocolate mixture over rice Krispies and marshmallows and stir to combine.

Drop cookies onto prepared wax papered baking sheets with a spoon. (They will not be uniform and should look a bit like a mountain shape ;))

Let sit up to 2 hours or until chocolate hardens. Store in an airtight container for up to 2 weeks or in freezer for 2-3 months.

*Makes 24-36 cookies

Enjoy!! :)

BBQ shredded chicken sliders

Hi friends, Today I'm sharing one of our favorite chicken recipes: BBQ Chicken Sliders. It is super simple and can be prepped ahead so you can take with you anywhere or prepare in a hurry to feed your crew.  1) Start by adding 6-8 frozen chicken breasts (I purchase a big bag of individual flash frozen chicken breasts at Costco) into my Instant Pot and line them side by side. (If chicken will be used only for this recipe create a delicious bbq shredded chicken with: 2 cups of bbq sauce, 1/2 cup of italian dressing, 1/8 cup brown sugar and 1 cup of water to the I.P.) 2) Add 1 1/2 cups of water to the bottom of the I.P. add lid and seal to venting.  3) Cook on manual for 14-15 minutes and let sit for another 5-10 minutes before doing a quick release. 4) Remove from I.P. and shred chicken while still hot (it should shred easily) * I like to use tongs to shred the meat by lightly twisting the meat apart.  5) Set meat aside  6) Prep sliders by slicing your chosen ro...

Tips for planning the perfect trip to Charleston South Carolina

Have you ever visited a place and instantly fell in love with everything about it?  Visiting Charleston is absolutely magical, it's like being transported back to a different place and time. Where all the stress from a crazy, chaotic whirlwind of a year (like 2020) melts away and is exchanged for southern charm, sweet tea, a stroll down historic cobblestone  streets and an abundance of scenic & memorable locations to visit. When we arrived in Charleston I could immediately sense myself feeling lighter and more care free while the soothing gentle southern breezes washed over me. I wanted to savor every second of our vacation and for our time in this amazing city to never end. Sadly though, our reality was that we only had 4 days to explore around the city & surrounding areas. We also spent 1 amazing day in Savannah Georgia (you can read about our Georgia adventures in an up coming post! :)) Since we were in the holy city less than a full week we wanted to make sure to m...
