Pecan-Pear Green Salad

 My family loves this salad! I have been making it for holiday gatherings for the past 7 years and the bowl is always empty on the way home, haha. This year was no exception, although we had a much smaller gathering it was requested and as usual the bowl was scraped clean;) 

One of the great things about this salad is that it can be prepared ahead of time and will keep well in the fridge for a few days (*before the dressing is added to it) which makes it a snap to bring to a holiday gathering, potluck or take on a picnic.

Ingredients:

1 container of mixed salad greens (I prefer O Organics mixed greens) 

1-2 medium  ripe danjou pears  (sliced into thin slices)

1 avocado (sliced into slivers or thicker chunk size pieces)

1 cup dry roasted, sugared pecans 

*Additional ingredients options:

Dried Craisins or Dried Blueberries

Fresh blueberries & strawberries in lieu of pears

Feta cheese

Slices of Chicken would be excellent in this as well to add some more protein and make this more of a meal on it's own :)

Dressing:

1/2 cup olive oil

1/8 cup red wine vinegar

2 tablespoon minced garlic (or 1/2 teaspoon of garlic salt)

2 tablespoon honey mustard 


Directions:

Mix all salad ingredients in large bowl. 

Combine all dressing ingredients (preferably in a shaker, container ingredients can be shaken to mix well), and shake vigorously for 2-3 minutes until well combined. 

*If prepping ahead store salad and dressing in refrigerator separately until ready to serve.

Drizzle dressing over salad and toss to combine just before serving.

  Today I'm going to share one of my family's favorite weeknight meals with you, our version of a cafe' yumm bowl. Hello again friends,  In my last post I shared a list of over 170 field trip ideas to help get your creative juices running and thought today I would share a list of some of our favorite extracurricular activities, life lessons and fun learning opportunities that we have incorporated into our school life over the past 6 1/2 years.  I'm also including a fun list of things you may enjoy or want to try for the holidays. Especially since this year has been so different than every other year (thanks to Covid-19) I think it could be a really great year to find some new activities or traditions to try with our family and hope you might find some fun ones you want to try as well. obviously not all of these will be available in every area or at all this year due to everything surrounding the corona virus craziness in our country.  My hope is that you will find at least one new thing that looks like fun or peeks your interest and that it will help your family make some fun memories...

Cinnamon Roll French Toast Bake

Every year this delicious casserole is the main request for our special holiday brunch menu. My kids and hubby can't get enough of this gooey, sweet casserole and we very rarely have leftovers ;) One of my favorite things about this recipe is that it can be made ahead of time and stored in the fridge overnight so it's ready to bake Christmas or Easter morning (we also love bake it on Thanksgiving morning or birthday mornings too :)) which saves me tons of time on holiday mornings & allows me to not spend so much time in the kitchen. ;) I also love that it is an easy recipe to make and my kids enjoy helping me prep the dish.
