Oreo Cream Pie

If I had to choose one of my families most requested pies it would be this or my recipe for oreo pudding cake (recipe link coming soon! ;) )

My Hubby isn't a huge fan of chocolate (😲I know crazy right! ;) ), but he LOVES anything with oreo or cookies and cream so I came up with this super simple pie for him & it's a favorite every time I make it :)

Ingredients:

  • Oreo cookie pie crust (either purchase pre-made or crush oreo cookies with a ninja chopper or blender & mix with melted butter and press into pie plate to form the crust)
  • 1 package oreo cookie and cream instant pudding mix (*also can use vanilla or white chocolate instant pudding mix, crush oreo cookies into a medium size chunks and mix into pudding before it sets)
  • 1/2 cups milk
  • 1 package cool whip or non dairy cool whip (I prefer Tru whip or coco-whip for a slight coconut flavor)
  • 1 package of Oreo cookies (we like to use double stuff or mint for a minty pie *If we are going for a mint pie I add a drop or 2 of peppermint oil to the oreo cookie and cream pudding mix while I'm mixing it with the milk)
Directions:
  1. Mix pudding mix with 1 1/2 cups milk (* add peppermint or oreo chunks if needed or desired), refrigerate for 5 minutes to set
  2. Remove pudding from fridge & mix with 1/2 cup of thawed cool whip or non dairy whip to pudding mix and spread into pie crust.
  3. Top pie with remainder of cool whip/non dairy whip and store in refrigerator until ready to serve.
  4. Crush oreo pieces into small chunks with a fork or ninja chopper & sprinkle across top of pie

*For Christmas I like to make a peppermint version by adding a drop or two of peppermint essential oil to the pudding mix (Could use peppermint extract instead). For an additional topping I like to crush several candy cane pieces or use one crushed candy cane to sprinkle on the top for an added "holiday" flavor :)

Enjoy!

Touring the Plantations of Charleston, part I: Drayton Hall

One of our main hopes while we visited Charleston was to visit & tour some of the stunning southern plantations in the area. While we were in Charleston we managed to visit 4 out of 5 plantations that are in close proximity of the city.  Join me as I take us on a tour of Drayton Hall, Middleton Place, Magnolia Plantation and Boone Hall Plantation. We will stroll down history lane, as I share my favorite parts of each plantation, a little brief history of each, recommendations of what to see first, time to arrive at each plantation & best day/time to visit them.  To get started one of the first things to consider is which plantations you'd like to visit and the amount you are comfortable spending & then decide what time of year you plan to visit. You'll need to figure out how many plantations you plan to visit during your vacation and how you'd like to fit your tours into your schedule. *I'd also suggest planning to start your day(s) bright and early to allow...

On my recent travels to Savannah Georgia I scoped out a plethora of murals that I know you're going to love. Check out several of my favorites below and be sure to like, save and follow along for more murals, hidden gems and travel insights from around several of the USA's top cities. One of our absolute favorites was the:   Welcome to Savannah   mural located on: 611 West Oglethorp Avenue (Shown in photo above). It is on the back side of the Thunderbird Hotel and easily accessible. It just so happened that the parking garage we found was just a block away & as an added bonus it was on our way towards the historic River Street.  Another one of my faves and a must stop for any Pepsi fan is the:  Pepsi Loves Savannah  mural lo...

Easy, Cafe Yumm style Rice Bowls

Today I'm going to share one of my family's favorite weeknight meals with you, our version of a cafe' yumm bowl. It is a very simple recipe that can be altered to cater to even the most picky eaters and easily adjust for everyone's various health needs. Of course ours includes rice, we prefer to use long grain brown rice or jasmine rice but it can be made with any type of rice or quinoa. I'm sure it could be made with tofu as well or another substitute for rice that you prefer.  I always like to make a big batch of rice in my favorite small kitchen appliance, my instant pot. *Friends if you don't have one of these babies yet you are missing out!! IMHO ;) For our family of 4 I like to make 4 or 5 cups of rice (that usually leaves me with plenty of leftovers that can be used in another meal later in the week and for lunch the next day). After my rice is cooked I empty it from my I.P. and mix in my previously cooked/shredded chicken (I like to make mine in my I.P...
