Homemade Coleslaw

 Hi Friends,

Today I'm sharing my favorite coleslaw recipe. I love that it can be adapted to your preference with just a few tweaks. One is rich and creamy and the other is a vinaigrette. Both are equally delicious and make an excellent side dish or as a topper to this yummy bbq shredded chicken slider recipe: https://thishomeschoolerslife.blogspot.com/2020/10/bbq-shredded-chicken-sliders.htm .



Coleslaw Ingredients:

  • 3 cups green cabbage finely shredded
  • 2 cups purple cabbage finely shredded
  • 1 cup carrot finely shredded

Vinaigrette Coleslaw Dressing:

3 tablespoons apple cider vinegar

* 4 tablespoons canola oil

* 3 tablespoons white sugar

1/2 teaspoon dijon mustard

1/4 teaspoon celery seeds

salt & pepper to taste



Creamy Dressing:

* 1/2 cup mayonnaise/dressing

1 tablespoon white vinegar

1/2 tablespoon cider vinegar

2 teaspoons sugar

½ teaspoon celery seeds

salt & pepper to taste


Instructions:

  • Combine all dressing ingredients in a bowl.
  • Toss with cabbage & carrots. Refrigerate at least 1 hour before serving to allow flavors to blend.

*Recipe can be prepared up to 3 days ahead if stored in an airtight container and refrigerated. Yields about 6 servings

Tips for planning the perfect trip to Charleston South Carolina

Have you ever visited a place and instantly fell in love with everything about it?  Visiting Charleston is absolutely magical, it's like being transported back to a different place and time. Where all the stress from a crazy, chaotic whirlwind of a year (like 2020) melts away and is exchanged for southern charm, sweet tea, a stroll down historic cobblestone  streets and an abundance of scenic & memorable locations to visit.
