Cowboy Casserole

 Hello friends, 


If your family is anything like mine they will love this super simple & delicious hearty casserole. I love that it is filling, healthy and can easily be made ahead of time or frozen to keep on hand for the busy days we just don't have a ton of time but I still want us to eat a homemade meal. :)

*Preheat oven to 375 degrees

1) Start by adding 6-8 frozen chicken breasts (I purchase a big bag of individual flash frozen chicken breasts at Costco) into my Instant Pot and line them side by side. (Also can be made with lean ground beef/lean turkey/sausage or ground elk). Cook on manual for 14-15 minutes, let sit another 5 minutes before quick release.

2) Dice 1/2 of 1 onion *(while chicken is cooking)

3) Drain one 15oz can of sweet corn

4) Add first three ingredients to a large mixing bowl & combine with 1/2 cup milk, 1 (10.75) oz cream of mushroom soup , 1/4 cup of sour cream, 1/2 cup of shredded cheese, 1/2 tsp of basil, 1/2 tsp of oregano & salt and pepper to taste) mix until well combined

5) Pour mixture into a greased 9x13 baking dish. Cover entire dish with frozen tater tots and sprinkle with remaining cheese. 

*Bake uncovered 25-30 minutes or until cooked thoroughly. Remove from oven and let cool 5-10 minutes before serving. 

*Top with a sprinkle of chopped chives or fresh basil

*If you plan to freeze: cover baking dish with aluminum foil and store for up to 3 months. 

*To bake thaw and cook as above or cook covered with foil for 15 minutes and uncovered for another 20-30 minutes or until tots are browned and meat mixture is bubbling.

Chicken Corn Chowder

 Hello friends, This is a fall favorite (but it's delicious any time of the year) in our home. My kiddos and hubby often request this hearty soup because it has great flavors and keeps their bellies full :) I'm always happy to oblige & we usually have all the ingredients on hand and it is a breeze to make this recipe.  What you'll need:   I'd suggest using an instant pot as this recipe was designed to cook in one. However, it could easily cook in a crock pot or big pot on your stove with the necessary time adjustments ;)  *Instant Pot *1 cup chopped or shredded chicken (could substitute with any meat you prefer. Charter School Distance Learning programs (for homeschoolers), what are they and how do they benefit your kids?

Over the years I've had many families ask what we are doing for our homeschool and how we afford so many field trips & have access to so many opportunities. Like many of you they have been curious to find out what my "secret" is and how they can have it to. It's not so much a secret as most homeschool families we know participate in one of these programs, but if you've been out of the loop & don't know what a DLP or a charter school dlp is, it can feel like a huge secret that you've been missing out on.
