Cowboy Casserole

 Hello friends, 


If your family is anything like mine they will love this super simple & delicious hearty casserole. I love that it is filling, healthy and can easily be made ahead of time or frozen to keep on hand for the busy days we just don't have a ton of time but I still want us to eat a homemade meal. :)

*Preheat oven to 375 degrees

1) Start by adding 6-8 frozen chicken breasts (I purchase a big bag of individual flash frozen chicken breasts at Costco) into my Instant Pot and line them side by side. (Also can be made with lean ground beef/lean turkey/sausage or ground elk). Cook on manual for 14-15 minutes, let sit another 5 minutes before quick release.

2) Dice 1/2 of 1 onion *(while chicken is cooking)

3) Drain one 15oz can of sweet corn

4) Add first three ingredients to a large mixing bowl & combine with 1/2 cup milk, 1 (10.75) oz cream of mushroom soup , 1/4 cup of sour cream, 1/2 cup of shredded cheese, 1/2 tsp of basil, 1/2 tsp of oregano & salt and pepper to taste) mix until well combined

5) Pour mixture into a greased 9x13 baking dish. Cover entire dish with frozen tater tots and sprinkle with remaining cheese. 

*Bake uncovered 25-30 minutes or until cooked thoroughly. Remove from oven and let cool 5-10 minutes before serving. 

*Top with a sprinkle of chopped chives or fresh basil

*If you plan to freeze: cover baking dish with aluminum foil and store for up to 3 months. 

*To bake thaw and cook as above or cook covered with foil for 15 minutes and uncovered for another 20-30 minutes or until tots are browned and meat mixture is bubbling.

Duel Enrollment programs, what are they and how do they work

   Hello friends, One of the questions I've received most often over the past year is what is duel enrollment and how does it work. Ever since we decided our daughter would participate in the program we have had many questions from family and friends. Mainly out of intrigue and interest, but I’m sure some curiosity about what the program is and how it works ;)  As most of our friends and family know, our daughter began her first year as a duel enrolled student at the beginning of this school year. She is both a junior in high school & enrolled as a freshmen at our local community college. The program she is enrolled in allows her to simultaneously earn both her high school credits and a years worth of college credits while she completes prerequisites at the community college. Savory Bbq Chicken, Bacon & Cheese Rolls

Tonight I concocted a new recipe and it received 5 gold stars from each of my family members & a request that I make it again next week. I'd say that makes it a hit with my fam! ;) It's such a simple recipe, takes less than 10 minutes to make and can easily be adapted to just about any preference or adjusted around allergies. Busy mommas, this recipe is bound to hit it out of the park with any bread lover in your family & help you get a delicious dinner on the table in under 30 minutes!   Since I happened to have a lot of shredded chicken leftover from a meal the other night that's what I used, however pulled pork or shredded beef could easily be substituted in these scrumptious savory rolls.
